The process begins in a number of ways. A research and development department may call and have a very good idea of what they need. Other times, they have an idea of what they want to accomplish, but are unsure what will work. That’s where we come in and can help even more. At this point, we assume a very consultative approach to help guide our clients to a selection. We talk over the properties of production and the final product to determine how either pure maple syrup or maple sugar can be most effective.
For example, if it’s a type of energy bar, is the ingredient mix dry or tacky? In a dairy product, certain grades simply don’t work because of acidity levels. Knowing what the customer’s final target is helps them in ultimately selecting the right pure maple product. And sometimes it may take a little experimentation on their end. We’ve worked with hundreds of customers and our broad experience can save time and money in R&D and final product costs.
Would you give us an example of one consideration companies integrating pure maple into their recipe should know above all else?
To have a clean ingredient list. Are they going to use this for a maple flavor or as an alternative sweetener? Maple can give them both as well as a pure ingredient list.
Why do formulators select a real ingredient like maple over imitation?
Because of it’s unique flavor profile. Pure maple has the natural maple flavor that food manufacturers desire. Artificial syrup definitely has a different flavor. There has never been an artificial maple flavored syrup that comes close to pure maple syrup. Imitation maple can have a harsh, chemical flavor.
If you are thinking about using pure maple in your product, below are some factors to consider:
1. How Will the Maple Perform?: Does the product being created need to have the maple syrup crystallize – for example, as a topping on the product? Will the recipe only call for dry ingredients or include liquids? There are times when pure maple sugar may be the better option over pure maple syrup.

Maple Syrup Grades Selection: To determine the maple grade that will work best for the product, the formulator needs to really consider how the maple will be used (i.e. baked in, as a sauce, swirled in ice cream….). 3. Pure Maple Sugar vs. Pure Maple Syrup: Do you want to use maple syrup or maple sugar? Let’s say you want to create an energy bar with pure maple flavoring. Some bar companies use maple syrup and some use maple sugar depending upon the existing recipe for the bar.
If there are liquids used in the recipe, you can take some liquid out and use maple syrup. If there is no liquid, you generally want to use maple sugar because it is a dry ingredient and will mix in well with that product’s formula. Your decision to use maple sugar or maple syrup really is recipe dependent.
4. The Sweet Story: Formulators should also consider if the pure maple would be the only sweetener in the product in development or if it would be used in conjunction with additional sweeteners.
5. Acidity Levels: Does the pH have an affect on your end product? Knowing and understanding pH or acidity in pure maple syrup is especially important when creating dairy products. For example if the pH is not exact to the recipe and it is being used in yogurt the product could curdle.
6. Size Matters When It Comes to Pure Maple Sugar: Does the size of the maple sugar granule matter? With maple sugar, how the ingredient will be used in the recipe can determine the size of the granule to incorporate. What you see in the sugar section of your local grocer is what is commonly thought of as maple sugar but in fact there are three different granulations. Knowing whether the maple sugar will be sprinkled on the product or mixed in are important considerations in selection. For instance, in a shortbread cookie, granules incorporated into the mix can create bursts of flavor, while powder (fine granulated sugar),will make the maple flavoring more uniform in the product.
